What is Freeze Dried?
Freeze drying foods goes way back to how the Incas living in the Andes in South America used to preserve their food, freeze by night and sunlight by day extracting the moisture. Freeze dried foods are rich in antioxidants, potassium and fibre. 1 of your 5 a day, freeze drying fruit and vegetables has very little impact on its nutritional content and has all the goodness of fresh*.
Today the produce are harvested when ripe allowing all the flavour and nutrients to develop fully. Quickly frozen at -40 locking in all the goodness, the water is extracted through a vapour system removing 98% of the water content, giving it a longer shelf life whilst retaining the flavour, colour and nutritional elements.

*Research conducted by Sheffield Universtiy in 2013 measured the nutrients in freeze dried , chilled and fresh Strawberries, found that refrigerated fruit retained only 20% of their antioxidants. While freeze drying no significant impact on their nutrient content, the freeze dried strawberries retained all their vitamin C and polyphenols and 92% of their antioxidants.
